Gosh.
I think it has to be Night Watch. The Watch series are my favorites. Mainly because of Sam Vimes.
But then, I'm a fan of pretty much all of the books!
I love the witches, and Granny, wherever they appear, but especially in Wyrd Sisters and Witches Abroad. I also really like the Tiffany Aching series because the Nac Mac Feegles are one of the most hilarious group of characters I've ever encountered.
I also love Death, wherever he and Susan appear, but particularly in Soul Music and Thief of Time (which has the bonus of including Lu Tze. I also actually really like it when the wizards appear, The Last Continent in particular. I think it's because Ridcully cracks me up.
But Vimes is my number one favorite character, and Granny my number two. So the guards series and the witches' series are probably my favorites, and Death/Susan's series very, very close after.
My favorite one-offs are Small Gods and Moving Pictures.

Of the wizard books...The Last Continent.
Of the DEATH books...Hogfather.
Of the Vimes books...Jingo.
Of the witch books...I like them all, but Witches Abroad, Lords and Ladies and Carpe Jugulum are up there.
Of the Tiffany Aching books...also generally like them, but Wintersmith stands out.
