    Candy colors are oil-based so as not to cause chocolate to sieze up. Any baking supply or gourmet food store would have them, as well as most craft stores.

    That sounds about right. You can even take some of the slices of the root and leave it in the oil. Since it won't be exposed to oxygen, it won't rot. Also on a side note since you said you had trouble finding the root, it's actually the root of the morning glory plant which is what we call it here in South Georgia. It's also known as bindweed and hedge bindweed. I don't know if that helps any, but I hope it does.
