I'm not going through it very fast, but adding a couple tablespoons to a glass of milk makes a very tasty, sweet, creamy thing that seems to supply the required daily caffeine intake wonderfully. Sometimes coffee bothers my stomach, but this stuff never.

5 1/2 cups drip coffee, prepared double strength or more
1 3/4 ounce package powdered fruit pectin (or more - I can't remember the measurement for liquid pectin. this was my substitution and made a sauce rather than a jelly)
    4 1/2 cups sugar
    2 tablespoons lemon juice

Put coffee into a medium/large pot. sprinkle with pectin, stir in and bring to a full bowl on medium high.
Stir in sugar, return to boil.
    Boil hard 2-4 minutes.
Put in 1/2 pint jars, leaving 1/4 inch head space and removing bubbles.
    Process 10 min.

I've only made it once. It made five and a half jars. I just stuck the half-jar in the fridge without processing and used it first.

Oops, skipped a line. Add the lemon juice after the pectin and before the sugar.

I wonder if I could use the chocolate oolong tea to do the same thing. This sounds so dang delicious. Thank you for posting the recipe! I'll be experimenting myself soon.

I adore tea, and have several favorites (although I usually say my absolute favorite is Earl Grey). With some exception, I drink my tea as dark as I can get it, no milk or sugar, honey if I'm sick sometimes.

And I've never heard of coffee jelly, but I will definitely need to try that asap. It sounds DELICIOUS.

Morning - Earl Grey, Irish Breakfast, Darjeeling
    Evening - Chai, Sleepytime, Chamomile
    Whenever - Peppermint, Jasmine
